8 BREAKFAST POWER WRAPS TO JUMP START YOUR DAY

Breakfast is definitely the most important meal of the day and these healthy power wraps prove that eating healthy can also be just as delicious as what’s prepared at your local greasy spoon.

For many people it’s already pretty hard to find time to eat breakfast in morning, but it’s especially challenging to have a breakfast that is healthy and quick to prepare. The answer to achieving both lies in the popular breakfast power wrap. By combining a collection of healthy ingredients that are guaranteed to give that early morning boost you need, while also being incredibly easy to prepare, there is no longer any excuse to skip the most important meal of the day. 1. Spinach and Egg Breakfast Wrap with Avocado and Pepper Jack Cheese

You can never go wrong with a breakfast recipe that has a generous amount of spinach and eggs. Both ingredients are healthy, but when you combine them with super food avocado and just a touch of pepper jack cheese, you have a breakfast wrap that will help you face the day head on. How to Make It

Spray a nonstick skillet over medium-high heat.

Add spinach and cook, stirring, until wilted, 2 minutes.

Whisk together eggs and egg whites in a small bowl. Add eggs to skillet and cook, stirring, until cooked through, 3–4 minutes. Season with salt and pepper.

Place 1/4 of egg mixture in the center of each tortilla, and sprinkle with 1 ounce cheese.

Top with 4 slices avocado and fold, burrito-style.  Slice in half and serve.

2. Egg and Kale Breakfast Wrap

By now the long list of benefits of eating kale are well-known, so it should come as no surprise that it’s also ideal to add to your breakfast menu. This breakfast wrap is filled with eggs, veggies and cheese, but it’s the kale that gives you the best morning boost you could ask for. Check out the recipe.

How to Make It

Cut away and discard the stem from the center of each kale leaf. Coarsely chop the kale into 1-inch pieces. It will look like you have a lot of kale, but it will cook down considerably.

Heat the oil in a large nonstick skillet over medium heat. Add the tomatoes, thyme, garlic, shallots and red pepper flakes, if using. Saute until the tomatoes and shallots soften, about 4 minutes. Add the kale and sprinkle with the salt. Toss with 2 wooden spoons until the kale wilts but is still bright green, about 2 minutes. Stir in the basil. Remove from the heat.

Fill a wide shallow pan with 2 to 3 inches of water and bring to a gentle simmer, barely a bubble really.

Meanwhile, using tongs, toast each tortilla directly over high heat until beginning to blacken in spots, about 15 seconds per side. Put the warm tortillas on plates. Spoon 1 tablespoon of hummus on each tortilla and spread to cover, leaving a 1-inch border. Divide the kale mixture over the hummus.

Add the lemon juice to the barely simmering water. With a wooden spoon, stir the water briskly to create a vortex in the middle of the pan. Crack an egg on the counter and break it directly into the center of the vortex. Stir the water gently again around the outside of the egg to help the white fold up around itself. Cook until the white is just set and the yolk is still very soft, 2 to 3 minutes. Using a slotted spoon, remove the egg from the water and dab on a towel to remove excess water before moving it to one of the wraps. Continue with the remaining eggs.

Slit the yolks and press on the eggs a bit so the yolks begin to run (this will make them easier to eat). Fold up the bottom of each tortilla and then fold in the sides, leaving the wraps open at the top.

 

3. Sweet Potato, Black Bean, and Egg White Breakfast Burritos

At first glance, the idea of combining sweet potatoes, black beans, and egg whites may not look or sound like the most appetizing breakfast, but that couldn’t be further from the truth. Not only is it pretty tasty, but it is also incredibly healthy, especially the powerful combination of the sweet potatoes and black beans. Check out the recipe.

How to Make It

Cook sweet potatoes: Pierce sweet potatoes with fork a few times. Place in microwave and microwave on high for 4-6 minutes or until cooked though. This may take up to 10 minutes depending on how thick your sweet potatoes are. Alternatively you can roast them in the oven at 400 degrees for 45 minutes. Once sweet potatoes are cooked, remove the skins and place potatoes in a medium bowl. Mash with a fork; set aside.

In a separate large bowl, add black beans, cumin, chili powder and red pepper flakes if desired. Stir to combine then set aside.

In a separate medium bowl, beat egg whites together. Spray a skillet with nonstick cooking spray and place over medium-low heat. Add in egg whites and cook. Fold every few minutes to get fluffy eggs. Once cooked, remove from heat.

To assemble burritos, make sure you have warm tortillas; it makes them easier to roll. You can warm them up for 10-20 seconds in the microwave before assembling. Lay out warm tortillas and evenly distribute and spread mashed sweet potato on each. Evenly distribute egg whites, diced avocado, black beans, and shredded cheese on each tortilla. Next drizzle about tablespoon of enchilada sauce in each. Season with salt and pepper, if desired. Tuck ends in, then roll up burritos. To warm up: Place on baking sheet in oven at 300 degrees for 5-10 minutes or simply microwave them for a minute or two. Serve with sour cream, greek yogurt, salsa, or hot sauce.

 

4. Cinnamon French Toast Wrap

Breakfast power wraps aren’t all about the savory flavors. If you prefer sweetness with your morning meal, then this one is sure to be a welcomed treat. You can never go wrong with cinnamon French toast, but when you roll all the ingredients up into a wrap, you’ll be begging for seconds. Check out the recipe.

How to Make It

Heat a large skillet over medium-high heat and prepare it with an all-natural cooking spray or coconut oil.

Whisk eggs, cinnamon and vanilla together in a shallow bowl. Dip wrap in shallow bowl, making sure to cover the entire wrap with the egg mixture. There will be leftover egg mixture.

Lay the wrap flat on the skillet and cook for about 2-4 minutes on each side.

Transfer wrap to a plate and use the same heated skillet (you may need more cooking spray or oil) to cook up the leftover egg mixture, omelet style. Cooking your egg omelet or pancake style makes the egg easier to transfer to your wrap and it also will stay put in the wrap better.

Add in all of your favorites, like the suggested banana, strawberries, blueberries and a drizzle of nut butter.

Roll up your Cinnamon French Toast Wrap and cut in half, if desired. I added a drizzle of maple syrup and a sprinkle of shredded unsweetened coconut over the top.

5. Healthy Italian Breakfast Wrap

If you love the traditional flavors and ingredients of Italian cooking, then you’ll be happy to try this breakfast power wrap recipe. It contains all of the things that make Italian dishes so good. This one features mozzarella, turkey bacon, tomatoes, zucchini, Italian seasoning and mushrooms. Check out the recipe.

How to Make It

Heat a non-stick skillet over medium heat. Add olive oil, garlic, bacon, and shallots. Saute for 2 minutes.

Add all other vegetables, salt and pepper, and saute for 6-8 minutes, until vegetables are softened to your liking.

In a small bowl, beat egg substitute, water, and Italian seasoning.

Add egg mixture to skillet, and let it set for 3-5 minutes, almost like you are making a frittata.

When the mixture is starting to solidify through the middle, begin to scramble gently, and continue until eggs are cooked through.

Add tomatoes and mozzarella cheese, and cook until cheese is melted. Serve in tortillas, and top with parmesan if desired.

6. Mediterranean Breakfast Wrap

Mediterranean flavors are some of the best to cook with and this translates to breakfast recipes as well. This is definitely not your average breakfast power wrap and that is exactly what makes it taste so good. How to Make It

Heat a 10-inch skillet over medium heat and prepare with non-stick cooking spray if necessary.

In a bowl, whisk together AllWhites egg whites and pesto.

Pour into skillet and sprinkle with spinach leaves.

Allow egg mixture to set and flip gently.

Once egg whites are cooked through but still soft, sprinkle with feta cheese. Cover and cook for one additional minute.

Cut the cooked egg in half.

Spread each whole wheat tortilla with 1 tablespoon of the hummus.

How to Make It

Prepare fresh fruit.
Heat tortilla in microwave for 10-15 seconds. Spread on Peanut Butter and Jam.
Scatter fresh strawberries, bananas, and granola over tortilla.

How to Make It

Lay a bed of lettuce in a line down the center of a whole grain wrap. Top with scrambled tofu, avocado and tomato.
